氯丙醇是国际公认的食品污染物，包括单氯取代的3-氯-1，2-丙二醇（3-MCDP）和2-氯-1,3-丙二醇（2-MCDP）以及双氯取代的1,3-二氯-2-丙醇（1,3-DCP)和2,3-氯-1-丙醇（2,3-DCP）。其主要污染来源于酸水解植物蛋白（HVP）以及食用油的精制中的副产品。氯丙醇不仅具有致癌作用，还有抑制精子活性的作用。
