老北京火锅也称“涮羊肉”,选取阉割过的羊,肥瘦相间的后腿肉最佳,放入炭火铜锅中涮10秒钟便熟。最正宗的吃法为:清汤(只放入大蒜、姜片、红枣、香菇,不加调味料)加麻酱(北京最风行的蘸料芝麻酱)。比较有名的涮羊肉餐馆有东来顺、口福居、宏源南门涮肉城等等。

驴打滚是黄米面团卷豆沙,不过卷好后将其在黄豆面上翻滚,让表面沾上一层黄豆面,以避免水分蒸发导致干裂从而影响口感。驴打滚口感软糯,不黏牙,深受老北京的欢迎。
