ISO 18363-1:2015 describes a procedure for the indirect determination of 3-MCPD esters (bound 3-MCPD) and possible free 3-MCPD after alkaline catalysed ester cleavage and derivatization with phenylboronic acid (PBA). Furthermore, this part of ISO 18363 enables the indirect determination of glycidyl esters (bound glycidol) under the assumption that no other substances are present that react at room temperature with inorganic chloride to generate 3-MCPD. ISO 18363-1:2015 is applicable to solid and liquid fats and oils. Milk and milk products (or fat coming from milk and milk products) are excluded from the scope of this part of ISO 18363.

ISO 18363-3:2017 specifies a procedure for the simultaneous determination of 2-MCPD esters (bound 2-MCPD), 3‐MCPD esters (bound 3‐MCPD) and glycidyl esters (bound glycidol) in a single assay, based on acid catalysed ester cleavage and derivatization of cleaved (free) analytes with phenylboronic acid (PBA) prior to GC/MS analysis. ISO 18363-3:2017 is applicable to solid and liquid fats and oils. For all three analytes the limit of quantification (LOQ) is 0,1 mg/kg and the limit of detection (LOD) is 0,03 mg/kg.

1　术语和定义下列及GB/T 11765规定术语和定义适用于本文件。 1.1　黎平山茶油以贵州省黎平县区域内种植生产的油茶籽为原料，通过压榨（鲜榨、水酶法、浸出）工艺制取的，符合本文件要求的油茶籽油。 2　质量要求 2.1　感官指标色泽金黄，澄清透明，无沉淀物，气味清香，无异味。 2.2　质量指标黎平山茶油质量指标除符合GB/T 11765二级指标的规定要求外，其它指标还应符合表1要求。表1　黎平山茶油其他指标项目　指标主要脂肪酸/%　饱和脂肪酸　7.0~11.0 　油酸（C18:1）　77.0~87.0 　亚油酸（C18:2）　7.0~14.0 2.3　食品安全要求食品安全指标按 GB 2716和国家有关标准、规定执行。 3　可追溯信息 3.1　油茶籽原料信息供应方应提供油茶籽原料追溯信息。 3.2　茶油生产信息 3.2.1　记录生产过程中原料的信息，并与3.1的信息关联和对应。 3.2.2　记录茶油生产过程中有关追溯的各项数据，包括辅料和废弃物使用的记录。 3.3　可追溯留样采用适当贮存条件，对生产的油茶籽和茶油做批次留样，作为追溯备查。留样的保存期限至少到茶油保质期结束。 4　检验方法 4.1　透明度、气味、滋味检验:按GB/T 5525执行。 4.2　色泽检验:按GB/T 5009.37执行。 4.3　脂肪酸组成检验：按GB 5009.168规定检验。 5　检验规则 5.1　扦样扦样方法按照 GB/T 5524规定执行。 5.2　组批与抽样以同一批原料，同种工艺，连续生产的产品为同一批次。 5.3　出厂检验 5.3.1　应逐批检验，并出具检验报告。 5.3.2　按第2章的规定检验。 5.4　型式检验 5.4.1　当原料、设备、工艺有较大改变或监督管理部门提出要求时，均应进行型式检验。 5.4.2　按第2章的规定检验。当检测结果与第2章的规定不符合时，可用生产该批产品的油茶籽原料进行检验、佐证。 5.5　判定规则产品指标完全符合第2章规定的，判定为合格产品；产品有一项以上不符合第2章规定要求的，判定为不合格产品。 6　标签 6.1　应符合GB 7718和GB 28050规定要求。 6.2　应在包装上或随行文件上标识“黎平山茶油”商标。 6.3　应在包装或随行文件上标识制油工艺（压榨、鲜榨、浸出、水酶法等）。 7　包装、储存、运输和销售 7.1　包装应符合 GB/T 17374及国家有关规定和要求。 7.2　储存应储存在卫生、阴凉、干燥、避光的地方，不得与有害、有毒物品一同存放，尤其要避开有异常气味的物品。 7.3　运输运输中应注意安全，防止日晒、雨淋、渗漏、污染和标签脱落。散装运输应使用专用罐车，保持车辆及油罐内外的清洁、卫生。不得使用装运过有毒、有害物质的车辆。 7.4　销售预包装的成品油茶籽油在零售终端不得脱离原包装散装销售。 ━━━━━━━━━━
