5 加工 5.1 烘干  鲜椒果实经50℃~80℃热风烘干,烘干后冷却至35℃~45℃后分装。根据GB 10465-89,烘干产品在回温后含水率≤14%,含水率的检测按照GB 5009.3测定。 5.2去把  经烘干产品通过去把机进行去把处理,去把率≥95%。 5.3风选  经去把后的产品通过风选机进行风选处理,风选应去除断裂椒等轻杂质,除杂率≥85%。 5.4过筛 经风选后的产品通过筛选机进行过筛处理,过筛应去除脱落的辣椒明籽,残余辣椒把等杂质,除杂率≥80%。 5.5色选 经过筛后的产品通过色选机进行颜色差异选择,色选应去除黑斑、黄梢、花壳、白壳、糊椒,使产品色度均一,也可根据客户需求进行分级色选,除杂率≥95%。 5.6 异物分选 经色选后的产品通过X-光机对异物进行扫描分选,应去除金属等杂质,除杂率≥99%。 5.7切断 根据生产需求进行切断处理,得到辣椒干。 5.8装袋 根据客户需求,分装辣椒干,辣椒干的分装标准为20kg/袋、25kg/袋、40kg/袋三个规格。包装袋为内、外组成,外袋为聚丙烯材质编织袋,内袋为55~65μm聚氯乙烯袋。 6仓贮 6.1冷库准备 贮藏前10天应对预冷库、贮藏库进行消毒灭菌处理,库内四壁、内顶,地面使用1000倍二氧化氯溶液进行喷施,密闭24小时,然后打开风机、库门进行通风,通风12小时,然后关闭库门,对库体进行检修,温度校准。贮藏前3天,向库内通入臭氧进行灭菌,每12小时向库内通入一次臭氧,每次浓度需达到2μL/L -3μL/L,密闭24小时后开门通风2次,预冷库、贮藏库均降温至2±1℃。 6.2预冷 辣椒干根据需求进行不同重量装袋后,暂不扎口,放入预冷设施(机械冷库或压差预冷),辣椒干温度于12小时内降至2±1℃,预冷期间通入臭氧,库内臭氧通入浓度应达到2μL/L~3μL/L,频率为8h/次。 6.3入贮 将预冷完毕后的辣椒干分批转入贮藏库,并扎口。每次装入已预冷辣椒干不超过库容的1/3。然后转移到贮藏库内堆码整齐,间隔不低于3小时,每间冷库最大装载量为库房容积的85%,贮藏库温度应该达到2±1℃。  码垛的走向、排列方式应与库内空气循环方向一致,在确保冷却循环前提下,每袋库内合理码放,最低层垛底安置标准化托盘(1200mm*1000mm),托盘下留5~10cm间隙,四周与墙壁相隔10 cm~15 cm。 6.4 贮藏温度 贮藏温度设置为2±1℃,使用机械或结合智能温度计,人工定时监测冷库库温(5d/次),并记录。 6.5 贮藏时间 不宜超过12个月。 7 出库 将从库内取出的辣椒干放于阴凉处,逐步接近环境温度后方可装车。 8 运输 将盛装鲜椒果实的生鲜塑料周转箱在有通风、防雨设施的车厢内整齐码放,以防运输过程中垮塌及挤压,不得与其他果蔬混运。运输过程中行车平稳、避免颠簸,采摘后6 h内运至机械冷藏库或加工厂。运输工具要无异味、干燥、清洁、无污染;运输时应防潮、防雨;严禁与有害、有毒、有异味物品混装。
