Scope
This standard specifies the method for evaluating and determining the shelf life of food through sensory inspection. During the set storage period, the changes in the sensory characteristics of the food in terms of appearance, smell, taste, texture, trigeminal sensation and flavor are evaluated by sensory tests. This International Standard provides guidance for developing procedures for determining the shelf life of specific products. Even in relation to the use of this standard, the intent of this standard does not address all safety issues. It is the responsibility of the user of this standard to establish appropriate safety and health safeguards and to specify any limitations prior to use. Note: When estimating the shelf life, it is necessary to consider the sensory test results while considering the microbial test and physical and chemical test results.
