The method in this Technical Specificiation specifies the calculation of the approximate content of phosphorus from added phosphate salts and phosphorus containing pH-regulating agents in processed cheese products. The method is applicable to processed cheese products derived mainly from cheese varieties with a P:N ratio of 0,12 ± 0,02 and containing no ingredients in quantities substantially affecting the P:N ratio of the cheese raw material.

Dieser Teil von ISO 11816 / IDF 155 legt ein fluorimetrisches Verfahren fur die Bestimmung der Aktivitat der alkalischen Phosphatase (ALP, EC 3.) in Rohmilch und pasteurisierter Vollmilch, fettarmer Milch, Magermilch und aromatisierter Milch fest. Dieses Verfahren ist fur Milch und flussige Milchprodukte von Kuhen, Schafen und Ziegen anwendbar. Es ist auch auf Milchpulver nach Rekonstituierung anwendbar. Das Gerat kann Aktivitaten von bis zu 7000 Milliunits je Liter (mU/l) auslesen. Wenn die Aktivitat groser als 7000 mU/l ist, dann ist mit Milch, die frei von alkalischer Phosphatase (7.1) ist, zu verdunnen, um ein Ergebnis kleiner als 7000 mU/l zu erhalten.
