This standard specifies the HPLC method for the determination of organic acids (tartaric acid, malic acid, citric acid, succinic acid) in food. This standard applies to the determination of organic acid content in fruits and vegetables and their products, beverages and other foods. The detection limit of this method is: tartaric acid 0.1 μg/mL, malic acid 0.3 μg/mL, citric acid 0.5 μg/mL, succinic acid 2.0 μg/mL.
